Rolling: *any* package is upgraded whenever there is a new version. Till armageddon.
Stable: *no* package is upgraded, only security and bugfixes come in for a while [1].

Rolling applies to: Debian Testing, Debian Unstable (hence LMDE, Aptosid)
Stable applies to Debian Stable

[1] About 3 years for a stable Debian release.

The #! that I'm currently using is Statler r20101205, not Alpha2 neither of which are new versions. When Squeeze is released Crunchbang will be based on Wheezy and Statler may become Waldorf. http://crunchbanglinux.org/forums/topic/10418/crunchbang-10-statler-r20101205/page/5/

It seems that the consensus now is that Statler may go stable, so I guess you were right. I have changed my sources list to testing and disabled the Statler repository to avoid any conflicts.
